strawberry rice krispie cupcake treats 

Friday night I did a little experiment and made strawberry rice krispie treats in cupcake shapes with strawberry icing!

My husband has been requesting using strawberry marshmallows in rice krispie treats for some time now. I didn't think it would be that good. But Friday we saw strawberry marshmallows in the grocery store and I decided to give in and try it.

Then he decided he wanted strawberry icing on it to. WHAT?!? I didn't think icing would be good on a rice krispie treat. But I decided to give in and try it.

I melted one 10 oz package of strawberry marshmallows and 3 tablespoons of butter in a pot.

Meanwhile I measured out six cups of rice krispies and buttered my large muffin pan.

The strawberry marshmallows and better got REALLY pink!

I mixed in the rice krispies. It's hard to see in the photo, but the mixture took on some pink swirls.

I pressed the mixture into the cupcake tin. They formed very quickly and they were easy to get out.

Here they are ready for the icing.

The Betty Crocker icing was nice and light. I ran out of strawberry icing for the seven cupcakes I made. But I have some Betty Crocker fluffy white that I swirled with the strawberry icing for the last two.

They came out delicious! The rice krispie treats had a subtle strawberry taste, Kind of like a strawberry shortcake ice cream bar. The strawberry icing enhanced the flavor.

Next time I would use a regular size muffin pan. I could only eat half. I had the biggest sugar high!

And I would do it for a party. The treats had to be refrigerated because of the icing. Therefore making the rice krispie treat hard.

It was a fun experiment!

I love this idea I'm gonna try it thanks! I bet if u made buttercream frosting using half butter and half shortening that would taste gret plus u could keep them in a cake dome on your counter instead of the fridge. Just a Thot!

Love it! I'm going to try this in mini muffin tins and use homemade whipped cream to cut down on the sweetness overload. Love the little strawberry garnish too! You could top with a bunny peep for an easter treat!

I want to try these, they are adorable! But I am not a huge sweet icing fan, so I think I'll use cool whip jello frosting(mix only half the water with the jello mix, let it set just a little bit then mix it into the cool whip) .
